Keto Lady Mediterranean Beef Skillet

🍛 Ingredients:


* 1 lb ground beef

* 1 tbsp olive oil

* 1 small red onion, thinly sliced

* 2 cloves garlic, minced

* 1 zucchini, sliced

* 1 yellow zucchini, sliced

* 1 red bell pepper, sliced

* ½ cup cherry tomatoes, halved

* ¼ cup Kalamata olives, sliced

* 1 tsp dried oregano

* ½ tsp ground cumin

* ½ tsp smoked paprika

* ½ tsp sea salt

* ¼ tsp black pepper

* ½ cup crumbled feta cheese

* 2 tbsp fresh parsley, chopped

* Juice of ½ lemon

👩‍🍳 How I made it:

1. Heat olive oil in a large skillet over medium heat.

2. Add ground beef and cook until browned, breaking it up as it cooks.

3. Add red onion and garlic. Sauté for 2–3 minutes until fragrant.

4. Stir in zucchini, yellow zucchini, and bell pepper. Cook 5–7 minutes until tender.

5. Add cherry tomatoes, olives, oregano, cumin, paprika, salt, and pepper. Stir well.

6. Remove from heat and finish with lemon juice, feta, and parsley.

Serve warm, straight from the skillet, or over a bed of greens.
