Ingredients (1 serving)

• 1 cup cottage cheese

• 1 tbsp coconut cream

• 1–2 tbsp allulose honey

• Juice of 1/2 lemon

• Lemon zest

• 2 tbsp unsweetened shredded coconut

• 2–3 keto highkey vanilla wafers (crushed) 👀

Directions

  • Blend cottage cheese, coconut cream, lemon juice, zest, and sweetener until smooth and creamy

  • Spoon into jars or cups

  • Top with shredded coconut

  • Sprinkle crushed highkey vanilla wafers on top for that crunch

  • Chill 30–60 minutes
