Ingredients (1 serving)
• 1 cup cottage cheese
• 1 tbsp coconut cream
• 1–2 tbsp allulose honey
• Juice of 1/2 lemon
• Lemon zest
• 2 tbsp unsweetened shredded coconut
• 2–3 keto highkey vanilla wafers (crushed) 👀
Directions
Blend cottage cheese, coconut cream, lemon juice, zest, and sweetener until smooth and creamy
Spoon into jars or cups
Top with shredded coconut
Sprinkle crushed highkey vanilla wafers on top for that crunch
Chill 30–60 minutes
