Keto Lady Super Duper Chicken by Grandma Nancy

Ingredients

  1. 4 boneless skinless chicken breasts

  2. ½ cup avocado mayo

Homemade Italian Dressing

  • ¼ cup olive oil

  • 2 tbsp red wine vinegar

  • 1 tsp yellow mustard

  • Pinch xanthan gum

  • 1 tbsp parsley

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp oregano

  • 1 tsp basil

  • ½ tsp salt

  • ½ tsp pepper

  • Pinch red pepper flakes

Light Crispy Topping:

  • ¼ cup crushed pork rinds

  • ¼ cup grated Parmesan cheese

Instructions:

1. Preheat oven to 350°F.

2. Pound chicken breasts so they are even in thickness.

3. Whisk together all dressing ingredients until slightly thickened.

4. Pour a little dressing into the bottom of a greased baking dish.

5. Coat chicken breasts on both sides with avocado mayo.

6. Mix crushed pork rinds and Parmesan cheese together.

7. Sprinkle a light coating over the top of the chicken.

8. Drizzle a little extra dressing over the top.

9. Bake for 30–40 minutes or until chicken is cooked through and lightly golden.

10. Optional: broil 2–3 minutes for extra crispiness.
