The Keto Lady Spinach-Stuffed Chicken Bombs

Tender. Juicy. Cheesy. A little fancy but so simple.
This one’s for the busy Glow Getter who wants to impress herself and stay low-carb.

What You’ll Need:
• 3 boneless, skinless chicken breasts (butterflied)
• 1 tablespoon avocado oil or olive oil
• 2 cups fresh spinach (roughly chopped)
• ½ cup diced red bell pepper
• 2 oz cream cheese
• ½ cup shredded mozzarella or provolone
• ¼ tsp garlic powder
• Salt + pepper to taste
• Toothpicks to secure

👩‍🍳 Directions:

1. Preheat oven to 375°F.
2. In a skillet, heat oil and sauté spinach and red pepper until wilted and soft (about 3–4 mins).
3. Stir in cream cheese, mozzarella, garlic powder, salt + pepper until melty and combined.
4. Spoon mixture into each butterflied chicken breast and secure with toothpicks.
5. Season outside of chicken with salt + pepper.
6. Bake uncovered for 25–30 minutes, or until internal temp hits 165°F.
7. Broil 2 minutes at the end if you want the top golden and sizzling.
