Keto Lady Chunky Monkey Banana Dream Bread

You already know how much I love Chunky Monkey ice cream from Ben & Jerry’s. But instead of a pint, I baked up my own Keto Lady take on it banana “bread” style. Think cozy banana flavor, swirls of chocolate, crunchy walnuts, and all low-carb. 😍

Want it plain? Leave out the chocolate + nuts and you’ve got yourself straight-up Banana Dream Bread.

👉 Ingredients (10–12 slices):

  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1/2 cup butter (or coconut oil), melted

  • 4 large eggs, room temp

  • 1/3 cup keto sweetener (allulose, monk fruit, or erythritol)

  • 1/3 cup unsweetened almond milk

  • 2 tsp banana extract

  • 1 tsp vanilla extract

  • 1/2 cup chopped walnuts (optional – for Chunky Monkey vibes)

  • 1/2 cup sugar-free chocolate chips (optional – for Chunky Monkey vibes)

👩‍🍳 Directions:

1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.

2. In one bowl, whisk almond flour, coconut flour, baking powder, baking soda, salt, and cinnamon.

3. In another, beat eggs, melted butter, sweetener, almond milk, banana extract, and vanilla until smooth.

4. Combine wet + dry until just mixed.

5. Fold in walnuts and chocolate chips for the full Chunky Monkey effect (or skip for plain banana bread).

6. Spread into pan, smooth the top, and bake 40–50 minutes, until golden and a toothpick comes out clean.

7. Cool completely before slicing.

Macros (per slice, 10 slices, plain version):

• Calories: ~180

• Fat: 15g

• Protein: 6g

• Net Carbs: ~3g

(Add ~1 net carb + ~40 calories if you use both chocolate + walnuts.)

Pro tip: Warm up a slice and smear it with almond butter if you want it to taste like dessert-meets-breakfast heaven.
